Lauren, aka Lala, aka my former roommate and of course dear friend, is in town for the week.  Since Friday we have indulged in the delights of food, drink and cheesy summer movies.

I always weigh myself on a Monday morning.  It is like a form of torture for overdoing it at the weekend and way for me to reprimand myself for the week ahead.  I honestly thought I would have put on at least 5lbs, instead I had lost 1lb!!!  How funny is that?  I have eaten like it was my full time job and I lost a pound! 

So, lots to update you on from the weekend.  Dinner at The Woodward (now closed) in the Ames Hotel.  Fantasy Tea” at L’Espalier and a movie that was so bad, it was fantastic!!!  Cowboys & Aliens – I can’t help myself, I loved it.

However, before I go into all of the above, which I will at some point this week, I wanted to share our Sunday dinner with you, which was delicious.

Shrimp Fra Diavolo
Adapted from Giada’s “Everyday Italian” Cookbook

Ingredients

1lb Frozen Cooked Shrimp (shelled) 
1 teaspoon of salt
1 teaspoon of crushed dried red pepper flakes
2 tablespoons of Extra Virgin Olive Oil
1 small White Onion – finely chopped
1 (14oz) Can of diced tomatoes with juice
1 Cup of White Cooking Wine
1 teaspoon of dried Oregano
1 Garlic Clove, finely chopped
1 tablespoon of dried Parsley
1 tablespoon of dried Basil
Salt & Ground Pepper

Directions

Defrost the shrimp and toss with red pepper flakes and salt.  Set aside.

In a large skillet, sauté onion and garlic in the olive oil for about five minutes.

Pour in the tomatoes with juice.  Add the wine, oregano, pepper and basil and simmer until sauce thickens, about 10 minutes.  

Add the shrimp and parsley, salt & pepper to taste, to the sauce, cover and simmer for 10 minutes.

Meanwhile, cook any pasta of your choice per directions.  I used linguine. 

Pour into a large pasta bowl and pour over the Shrimp Fra Diavolo.

Serve with parmesan and enjoy.  We certainly did!
