I woke up early on Sunday morning to the storm beating at my windows.  The news channel said it was starting to quiet down somewhat – thank goodness.  I am still a bit fearful of the tree outside my house.  It is swaying a little too much for my liking.  I am going to keep a close eye on that little minx today.  

Just slightly excited about being forced to stay in, I wondered what to do with myself?  Power was still on – good news!  I sneakily stole a look at my DVD collection and thought “yay movie day!”   I felt a selection of sci-fi was in order.  Don’t judge me, I do have a little bit of geek in me that loves Star Trek movies.   

So, before movie day…  If you have been reading my Blog lately, you know I have been going out a lot, which means I have had a lot of fresh produce that keeps going bad and has to be thrown out.  Really not good, for many reasons.  I was determined to put to use some bananas that were ridiculously overripe that eating them would be a messy disaster. 

I have a few Banana Bread recipes that I have found but one of my favorites is a Banana Sour Cream Bread I found on AllRecipe, which I have adapted a little to my own liking. 

Ingredients

2 cups all-purpose flour
1 tsp baking soda
¼  teaspoon salt
½  cup butter
¾ cup brown sugar
2 eggs, beaten
8oz Sour Cream
3 overripe bananas, mashed

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs, sour cream and mashed bananas until well blended and becomes a batter.

Pour banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Eating the batter is absolutely optional J

Bake in oven for 75 minutes, until a toothpick inserted into center of the loaf comes out clean.  Oh my goodness it smells good when it is baking!

Let bread cool in pan for 10 minutes before turning out

Slice and serve, with butter if desired – in fact, just try it with butter – its sooo good!   I might try my next slice with cream cheese and then my next one with butter and jam.  Its going to be a long day.

Then hunker down to watch Star Trek or any movie of your choosing.
