Sparkling Bee’s Knees

So I looked up the phrase Bee’s Knees and where it originated.  Apparently, it was an 18th century fanciful phrase which referred to something that didn’t exist. For cocktails, it is believed that it came about during prohibition when bathtub gin was popular.  Fun right?  Well, this recipe is fanciful, the gin came from a bottle and thank goodness we are not in prohibition anymore!

Do you love gin and bubbles?  Then why not combine these wonderfully complementary ingredients, add a little sweetness and some citrus and create a fabulous cocktail.  

Ingredients

  • 2 parts Gin

  • 1 part honey
  • 1 part fresh lime juice
  • Prosecco

I am drinking mine as I watch my new bingeworthy show on Netlflix, Bridgerton. I am feeling very British in my sweatpants while enjoying a prosecco cocktail.

Step by Step Instructions

Combine the gin, honey and lemon juice in a cocktail shaker filled with ice. 

Shake for 20 seconds.

Strain into a champagne glass and top up with prosecco.
