Aperol Spritz

This recipe is a fan favorite for my friend, Lauren. It brings back fun memories of outdoor dining and summer sunshine.  Why not bring this sunshine to a cold Kansas City Christmas Night hanging out around the kitchen?  We did and loved every minute of it.

About this Recipe

While Aperol, a bitter tasting Italian Aperitif has been around since the 1950s, it torpedoed into popularity around 2018 in the US and was the drink of the summer everywhere in many cocktail guises. I personally don’t like the taste of it on its own as I am not a lover of rhubarb with its sharp tartness.  However, mix Aperol with some bubbles and additional flavors and you get something happy and surprising. 

Ingredients

  • Crushed ice

  • 3 ounces (1 part) Aperol

  • 3 ounces (1 part) Sofia

  • 1 ounce (a splash) Grapefruit Bubly

  • slice and a sprig of rosemary, for garnish

There are 3 simple ingredients to a Classic Aperol Spritz… Aperol, Sparkling Wine and Club Soda.  Lauren did a twist on this with her recipe with using the mellow flavors of canned Sofia Blanc de Blanc Sparkling and Grapefruit Bubly.  What you get is a vibrant orangey red cocktail where the overall taste softens with citrus hits and a more appealing bitter finish.

Step by Step Instructions

Add ice to a large glass. Pour in the Aperol and Sofia and gently stir.  Top the drink off with a splash of Grapefruit Bubly.  Garnish with a slice of orange and a sprig of rosemary, just if you want to 😊
