I was recently chatting with a friend on zoom where we went down an hour long rabbit hole of reminiscing about the Chicago restaurant scene. I have so many favorites, it’s hard to work out what I miss most and was in a bit of a missing a dish daze when she proclaimed her love for the Wild Mushroom Risotto at RPM Italian. It immediately got me thinking about doing take out that night. I do miss my early evenings sitting at the bar of RPM Italian and long for those days to come back to us as I am sure every restaurant in the world feels for their customers.
As soon as we ended our chat, I immediately got onto the RPM website to check out their takeout/delivery menu. Firstly, I was thrilled to see they had the Wild Mushroom Risotto and even more delighted when I saw they had dinner wine pairings. Even better the wines are sold at cost, which I love. I immediately ordered the risotto along with an RPM recommended Italian white.
The risotto was everything I remembered it to be – rich, earthy, creamy and fabulous, perhaps even more delicious as it came with fond memories of dining at the bar with amazing friends. Oh, my goodness, what an insanely and indulgently good Saturday night treat for me!
The wine pairing was a 2017 San Salvatore Trentenare Fiano Paestum – a beautifully delicate white with hints of honey and nice bite of crisp apple and citrus, which paired perfectly with my risotto.
