My second home, some may call my cafeteria, is The Dearborn. I have to say this place has sustained me from being a newcomer to Chicago back in what seems like a decade ago, 2018. Through the pandemic, except that time, I don’t care to remember when they had to close down in the fall, to now when I need a glass of wine, a fabulous lunch, or a great dinner. The Dearborn never ever disappoints. The friendliest staff on the planet are the added bonus!
While I can celebrate many dishes… the fried chicken, the pizzas, especially the mushroom pizza, the best Brussel sprouts and the ceviche. I have to take a moment to regale you with their Whole Roasted Trout. I am a fish lover, so I know good seafood when I taste it. I know that restaurants can overdo, over-dress fish, and especially one that should reign supreme on the plate. That is precisely what the Dearborn does. It’s beautiful in its presentation. It’s light and delicate with simple complements of poached asparagus, creamy fingerling potatoes, and just the mildest hint of chili. It comes with brown butter, which I like to have on the side. This dish is genuinely worthy of Fab Dish Friday.
