For work I have had to do these little tests… it is all part of a manager’s training program I am doing. We had to do two prerequisite online tests associated with the Harvard Manage Mentor Program, followed by an intense 3-day workshop and then I had two additional “required” tests to do afterwards. I had been remiss in my final two and received an email telling me I am not going get the certificate if I don’t do it before July 31. Woops. It is not like me to put things off but feeling like I have to go “back to school” and work is just too much for my little brain. This past week I finally did the test on “Delegation” and got 90% I might add. The pass score is 70%.
So, with only one day left to do the final test on “Managing Upward” I got up early on Saturday morning in order to study and then take the test so I could enjoy the rest of this glorious day!
It was 7.00am and I woke up thinking about Frittata’s… why you ask? I have no idea but eggs were on my brain. I felt a good breakfast would set me up for the morning of studying and understanding how on earth I am going to be able to manage upwards to a boss I can barely get time with.
Red Bell Pepper & Mushroom Frittata
5 large eggs
1 Red Bell Pepper
1 ½ Cups Mushrooms
¼ Cup Onions
¼ Cup Grated Parmesan Cheese
Cooking Spray
Salt & Pepper
Directions
Pre-heat oven to 400 degrees F.
Coat a large skillet with cooking spray.
Roughly chop the pepper, onion and mushroom and add to the skillet. Cook for about 6 minutes.
Whisk eggs in a large bowl and add salt and pepper for taste.
Add eggs to peppers, onion and mushroom and mix together. Continue to move the mixture around so that it doesn’t stick for about 4-5 minutes.
Pour mixture into oven proof dish and add half of the parmesan cheese. Bake for 15-20 minutes or until mixture is no longer runny.
Turn on broiler.
Remove from oven and add the rest of the parmesan cheese over the top. Put back in oven and broil for an additional 5 minutes.
I enjoyed my frittata with toast and a little Avocado and a Kiwi… oh and talking to my sister for an hour, my friend for 30 minutes to make plans for Saturday evening, laundry and Twilight and then Twilight: New Moon. Well, they were on TV and I couldn’t help myself. I had to turn the stupid TV off before Twilight: Eclipse started!!!!!
My procrastination on doing my test took me to 1.00pm. So bad, what is wrong with me! I finally settled down, missing most of my wonderful day and passed the final test! Oh well, here’s hoping for many more gorgeous summer days that I can truly enjoy.
