I have no idea why I bought blackberries? I had thought I put blueberries in my shopping cart – apparently not. I like to pick at blueberries throughout the work day. They are really good for you and rumor has it they slow down the aging process. A 40-something woman needs all the help she can get! I can honestly say I never eat blackberries. I had to find something to do with them.
I found this recipe on Cooks.com, a site I use quite regularly when I am researching recipes. I tend to just go there for an idea and then I adapt a recipe around what I find. This Blackberry Cobbler recipe seemed so easy and had a lot of very positive comments so I decided to make it exactly to recipe and instructions. Well, not exactly, I added a little of my own flairJ
Blackberry Cobbler
Serves 4-6
Ingredients
2 tablespoons unsalted butter
2 cups fresh blackberries
2 tablespoons of lemon juice
1 1/4 cup all purpose flour
1 teaspoons baking powder
1 cup sugar
1 cup milk
Directions
Preheat oven to 325 degrees.
Melt butter and pour into a baking dish.
Sprinkle the blackberries over the butter. Add the tablespoon of lemon juice.
Cream flour, baking powder, sugar, and milk and pour over blackberries.
Bake at 325 degrees for 40 minutes or until browned.
I made this for dessert after the hearty and delicious Chicken Mushroom Stew with Dumplings and it made for an very over indulgent, wonderful Sunday.
Serve with vanilla ice-cream – so irresistibly good. Truly fantastic comfort dessert. Who knew that blackberries were that good?
