PorkI had some surprise visitors the other night.  A nice surprise as visitors can be but as it was dinner time I wanted to make sure I offered something.  I love cooking for others so insisted on them staying.  Stir fry is always something that is easy to throw together and you can mix and match different meats and veggies.  As I had just bought some pork I decided on Pork & Broccoli Stir Fry.

This particular recipe asks for very little effort and is something you can make very quickly and it always impresses.  My dinner guests seemed to thoroughly enjoy it.

Pork & Broccoli Stir Fry
Serves 3-4

Ingredients

1 cup cold water
1 teaspoons cornstarch
4 tablespoons soy sauce
2 teaspoons white vinegar
4 teaspoons vegetable oil
1lb pound pork tenderloin, thinly sliced
1 cup sliced mushrooms
2 cups fresh broccoli florets

Directions

In a small bowl, combine the cornstarch with cold water, soy sauce and vinegar until smooth; set aside.

In a large skillet or wok, heat oil; stir-fry pork and mushrooms for 5 minutes. Add broccoli and stir-fry for 4-5 minutes or until vegetables are crisp-tender and pork is no longer pink.

Stir cornstarch mixture and stir into skillet.  Bring to a boil; cook and stir for 2 minutes or until thickened.

Serve over rice or noodles.  I opted for whole wheat brown rice – a bit of a healthier option.
