Some fresh salmon I had purchased over the weekend had me wondering what to do with it.  I have great recipe for pesto salmon that I wanted to try, but I knew I wanted something a little lighter and healthier.  It was the start of the week after all.  I do always try to start the week on a good footing, but I also knew I was hankering pasta.  It was a bit of a dilemma.

I am always on food sites and found this recipe on Food.com and thought I would give it a little whirl.  I am glad I did.   This dish was absolutely lovely, tasty and of course somewhat healthy. 

Herb Salmon with Whole Wheat Penne

Serves 2

Ingredients

2 ounces whole wheat penne
1/4 cup olive oil
1 cup cherry tomatoes, halved
1crushed garlic clove
1/4 cup white white
1/2 lb salmon fillet,cut into bite-size pieces, boneless, skinless
1 tablespoon fresh sweet basil, chopped
1/2 tablespoon fresh oregano, chopped

Directions

Prepare pasta per package directions.

Heat oil in large skillet over medium-high heat while pasta cooks. Add tomatoes and cook 1 to 2 minutes. Raise heat to high and add wine, salmon, basil, oregano, garlic and and cook until salmon is just opaque, about 4 minutes.

Drain pasta and add to skillet. Toss with tomatoes and salmon to combine. Sprinkle with additional basil and oregano and some parmesan, if desired.

I did enjoy with a glass of Sauvignon Blanc, which was a little bit of a guilty pleasure for a Monday but it was just the one glass and I did have to open the bottle for the reduction.

 

I also enjoyed this dish cold for lunch the next day and it was just as good.
