Once again I joined my friend, Rob and his family for another holiday lunch.  I love Rob’s family, which I now feel very much a part of.  They welcome me like one of their own children, which not having any family in  America, makes me feel all happy and like a kid again. 

After a wonderful lunch/brunch, I left New Hampshire with a bag full of baked ham.  Not something one can say every day :). 

Once I got home I was wondering what I could make with the ham as I didn’t want it to go to waste and thought ham sandwiches would just be boring.  So, after perusing the net for a bit, I found some things I liked that gave me good ideas and put together a little dish with ingredients I had in my fridge and cupboards that turned out quite well indeed.

Ingredients

1/4 cup Italian Dressing.  I used “Wishbone”
3 large chicken breasts cut into large pieces
1 cup chopped red onion
3 Slices Baked Ham, cut into cubes          `
1 can chopped tomatoes
1 can of kidney beans, rinsed and drained
1/4 teaspoon of paprika
1/4 teaspoon of chili powder
1 ½ cups of white rice

Directions

Heat Italian dressing in large pan on medium-high heat. Add chicken and brown on all sides until cooked through.  Set aside.

Cook rice per instructions. 

Add the onion and ham with paprika and chili powder to pan and cook until onion is tender. Add tomatoes with juices and kidney beans.

Place chicken in tomato mixture and bring to a boil. Reduce heat to low and cover.  Simmer for 20 to 25 minutes or until chicken is cooked through.

Add rice into the mixture and mix through.  Cook for another 5 minutes on low heat.

Delicious, with or without rice, and lots of leftovers for the week.
