I was looking to be a little more adventurous this time and found this recipe on Allrecipes and I thought I would give it ago.
So good with the creamy goat cheese and hot kick of dijon mustard.
Baked Salmon with Goat Cheese
Adapted from a recipe from Allrecipes.com
Serves 2
Ingredients
2 salmon fillets
2 tablespoons of goat cheese
1 tablespoon of Dijon mustard
1 tablespoon of light mayonnaise
salt and pepper to taste
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
Place the salmon fillet baking dish skin side down. Make small incisions in the fillet, and stuff with equal amounts of the herb goat cheese.
Mix together the Dijon mustard and mayonnaise. Spread equal amounts over the fillet and season with salt and pepper.
Bake salmon 15 minutes in the preheated oven, or until easily flaked with a fork.
Serve with fresh vegetables.
I love baking salmon with mayo! Haven’t tried it with goat cheese yet though, sounds delicious!

Great comment. I should actually start putting preparation and cooking time. This dish is unbelievably quick. Total prep and cook time is about 25 minutes.
