I love the strong flavor of salmon; it’s usually my go to fish when I am dining out and even better I find it very easy to cook with.  Most of the time I simply poach the salmon in water and a little white wine and serve with crème fraiche.  Simple, delicious and quick.

I was looking to be a little more adventurous this time and found this recipe on Allrecipes and I thought I would give it ago. 

So good with the creamy goat cheese and hot kick of dijon mustard. 

Baked Salmon with Goat Cheese

Adapted from a recipe from Allrecipes.com

Serves 2

Ingredients

2 salmon fillets
2 tablespoons of goat cheese
1 tablespoon of Dijon mustard
1 tablespoon of light mayonnaise
salt and pepper to taste

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.

Place the salmon fillet baking dish skin side down. Make small incisions in the fillet, and stuff with equal amounts of the herb goat cheese.

Mix together the Dijon mustard and mayonnaise. Spread equal amounts over the fillet and season with salt and pepper.

Bake salmon 15 minutes in the preheated oven, or until easily flaked with a fork.

Serve with fresh vegetables.
