While I am more of a wine than a cocktail drinker, I do love a refreshing good cocktail every now and then, especially in the summer. There is nothing more refreshing than this awesome blueberry vodka cocktail.

Combine house-made blueberry simple syrup with vodka, club soda and splash of lemon juice and you have the best, very drinkable cocktail.

Ingredients and step-by-step instructions

3 parts vodka

1 lemon, juiced

2 parts blueberry simple syrup
-
Top with club soda
Shake the vodka, lemon juice and simple syrup over ice
Pour into a cocktail glass with the ice and top with club soda
Garnish with blueberries and lemon


Blueberry Simple Syrup
– 1 cup of fresh or frozen blueberries
– 1 cup of granulated sugar
– 1 cup of water

- Over medium heat combine water, blueberries, and sugar. Stir to combine
- Once boiling, reduce to simmer for about 15-minutes
- Break up blueberries until the syrup thickens
- Strain syrup mixture into a jar and press on blueberries to extract all the flavors
- Let the liquid cool completely
- Makes enough for 10-12 cocktails
- The syrup will last for about 3 months in the fridge in a sealed container
