Domaine du Colombier Chablis 2022
Let’s get straight to it: I’ve always been a Chablis girl. My friends in the UK predicted it when I was in my mid-20s, and here I am, an undisclosed number of years later, still swooning over this iconic wine. Some things never change—like my love for Chablis and my inability to say no to cheese.
This 2022 Domaine du Colombier Chablis is as refreshing as a cool breeze on a summer day. On the nose, it’s all about zesty citrus and those crisp Granny Smith apples that make you pucker in the best way. The first sip? A tropical tango with hints of pineapple and more of those crispy apples. And just when you think it’s over, it leaves you with a clean, minerally finish that practically whispers, “Go on, have another sip.”
While this Chablis is a match made in heaven for seafood, especially shellfish, I’ve chosen to pair it with a classic British rom-com: Bridget Jones’s Diary. Because nothing says “Chablis and chill” like laughing at awkward love triangles while trying not to belt out All By Myself by the end of the evening. (No guarantees, though. 😂)
But in all seriousness—which, let’s face it, isn’t my natural state when wine is involved—this bottle would also shine alongside a recipe I whipped up a while back: Mussels In Champagne that dreams are made of. Shall we call it a match made in culinary heaven? Absolutely.

Notes from the winery
Created from a blend of four different vineyard parcels in Chichée, a village renowned for producing fresh, mineral wines. Fermented and aged in stainless steel to preserve the wine’s crisp, citrus fruit and steely freshness. This wine is highlighted by distinctive flavors of apple and peach supported with mineral notes. Well balanced with a long and subtle finish.
This classically styled Chablis is a perfect match for seafood and fresh cheeses.
