As part of my Oscar Party menu I wanted something fun and a little different to add to the party food. However, I was moving away from the fancy and was leaning towards a little messier and then Chicken Drumsticks popped into my head.
As a child, when everyone wanted the white meat of the chicken I always wanted to the brown meat of the leg – so much more flavor. I could be found still at the table after everyone had left making sure I got every last piece of meat off the bone. Now I am all about the white healthier meat but these particular little jems will be made again, that’s for sure. They are perfect, messy and mighty taste!
Baked Chicken Drumsticks
Adapted from a Bon Appetit recipe
Serves 8
Ingredients
Nonstick vegetable oil spray
1/2 cup mayonnaise
1/2 cup coarse-grained mustard
1/4 onion – finely chopped
2 teaspoons Worcestershire sauce
1 1/2 cup dry Italian-style breadcrumbs
8 large chicken drumsticks
Directions
Preheat oven to 425°F. Spray small baking sheet with vegetable oil spray.
Whisk mayonnaise, mustard and Worcestershire sauce in medium bowl to blend.
Mix breadcrumbs and onion in another medium bowl
Dip 1 chicken drumstick in mayonnaise mixture; turn to coat. Place drumstick in crumb mixture; turn to coat. Transfer to prepared baking sheet. Repeat with remaining drumsticks.
Bake chicken until cooked through, about 25 minutes.
Everyone seemed to enjoy the drumsticks and I had a couple left for dinner the next few nights which I enjoyed with some leftover.
