Perched high on the 16th floor of The Canopy (Hilton Hotel) and just a hop, skip, and a panic attack away from the Willis Tower is a Mediterranean gem called Seville. Step inside, and you’ll be greeted by a riot of bright oranges and turquoise blues that’ll have you half-expecting a flamenco dancer to twirl by. Spain might be a plane ride away, but this spot will make you forget all about that pesky geography. Plus, there’s a massive rooftop for when the weather behaves, as it often does in a Chicago summer.
Now, let’s talk about how I ended up here for this particular visit. After braving the Skydeck at the Willis Tower—where I nearly left my soul on the 103rd floor’s glass floor while screaming, “Take the photo already!”—I was in desperate need of some liquid courage and a snack that didn’t involve looking down. Seville was the perfect escape. The late afternoon lull meant we had our pick of the restaurant, bar, or rooftop. Considering the sun was auditioning for the role of a heat lamp, we wisely opted for the bar, ordered a dainty glass of rosé (honest 😂) and dove into the menu.
Jamon and Cheese Croquettes
Today, I want to shine the spotlight on one dish that has become a little obsession: the Jamon and Cheese Croquettes. Picture this: gooey, melty cheese, mingling with salty bites of Jamon, all encased in crispy fried heaven. But wait, it gets better—these little delights come with a roasted garlic and bravas aioli dip that’s so good it might just bring a tear to your eye. If I could marry a croquette, these would be the ones.
Now, while the croquettes are the star of my #fabdishfriday, I’d be doing you a disservice if I didn’t give a nod to a few other contenders: the Shrimp Roll, Paella Style Risotto, and Cavatelli Spring Pasta are all worth a spot on your plate (and maybe an extra notch on your belt).
Seville is the perfect mid-week escape—whether you’re clocking out early for a Happy Hour that might turn into a Happy Evening or treating yourself to a Fun Day Friday. Just remember, life’s too short for boring food—so get your croquette on!
