Ingredients
- 2 tsp vegetable oil
- 2 tsp Dijon mustard
- 3 tbsp balsamic vinegar
- 1 large garlic clove, crushed (or pre-crushed in a jar—let’s be realistic!)
- 1 lb uncooked boneless, skinless chicken breast (four 4-oz pieces)
- 2 cups mushrooms, halved
- 1/3 cup chicken broth
- 1/3 tsp dried thyme
Step by Step Instructions
- Heat 1 tsp oil in a nonstick skillet.
- In a medium bowl, mix 2 tsp balsamic vinegar, Dijon mustard, and garlic. Add chicken, turning to coat.
- Transfer chicken and marinade to the skillet. Sauté until cooked through, about 3 minutes per side. Transfer chicken to a platter and keep warm.
- Heat remaining 1 tsp oil in the skillet. Sauté mushrooms for 1 minute. Add chicken broth, thyme, and the remaining tbsp of balsamic vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes.
